Cap'n's Cabaret #17: Stompin' on the Boardwalk!

Atlantic City!  Crown Jewel of the Jersey Shore!  A place of class, oppulence, and sophistication paired with bohemian revelry and libertine attitudes.  Here's where New York's best and brightest go to relax by the sea, and the world follows.  Here on the world famous Boardwalk there's fun for all ages...and if you know the right doors to knock on fun of different sorts for adults as well! 

And speaking of connections, my agent Ben Siegel has put me in touch with an old friend, the Grand Man of Atlantic City, Enoch Johnson, better known to his friends as "Nucky".  Mr. Johnson has put us up in a grand hotel overlooking the ocean.  He's also scored us a visit from the swingin' master of the Big Band, Tommy Dorsey himself, playing "On the Sunny Side of the Street" for this sunny local!

 

 

 Ain't that just the most swell thing you ever heard?  And what could go better with swing than sand, surf, and a choice of Pink Ladies!

 No, not that type of Pink Lady (hubba hubba), I'm talkin' about the Pink Lady Cocktail, a classic known for...well, having a few dozen different recipies.  Most can agree that it's got gin, egg white, and grenadine, but from there...lemon? Lime? Cream? Applejack?  So since variety is the spice of life here's a choice of three lovely Ladies for your pleasure.  And yet even more versions exist, and folks can be downright dogmatic over which is the "correct" Pink Lady.  So try them all.  Repeatedly.  In moderation, of course.  You can tell us which one's your favorite dame:

 

Pink Lady Cocktail (simple):

 - 1.5 oz Gin

 - 0.5 oz Grenadine

 - White of one Egg

Shake all ingredients over ice and strain into Cocktail Glass.

 

Pink Lady Cocktail (creamy; a.k.a. "Pink Shimmy"):

 - 1.5 oz Gin

 - 0.5 oz Cream

 - 0.5 oz Grenadine

 - Juice of 1/2 Lemon

 - White of one Egg

Shake all over ice and strain into Cocktail glass.

 

Clover Club Pink Lady (w/ applejack):

 - 1.5 oz Gin

 - 0.3 oz Applejack

 - 0.25 oz Grenadine

 - Juice of 1/4 Lime

Shake all over ice and strain into a cocktail glass.

Good info, thanks, Kyle!  "Date peeler"...sounds like standard thinking at the time. "Candy is dandy, but liquor is quicker" and all.

Funny tidbit about the Pink Lady...

A "Pink Lady" without the Applejack is called a Clover Club, which was a club that met at the Bellevue-Stratford Hotel in Philadelphia in the days before prohibition. It was generally considered a gentleman's drink. The kicker is the much boozier "Pink Lady", with that extra dash of Applejack, was considered a lady's drink.

I believe they used to call drinks like these "date peelers"...

News to me, Bryan, but that's a fair guess.  Sounds like Navy humor in action.

Interestingly, in military acquisition today they have to think about things like that. There are attempts to replace Ethelyne Glycol (sp?) based antifreeze/coolants with more eco-friendly versions you can "dump and run", but using alcohol-based coolants raises the possibility of the Soldiers/Marines/etc. simply drinking it all.

Cap'n, i was just wondering if this might the 'pink lady' that inspired a lot of WWII toprpedo-boat crews.. As i understand the torpedo proppellant was based on alcohol, thus a lot of crews drained some of the torpedo fluid, mixed it with grapefruit juice and also called it 'Pink lady'
